Crock Pot Birria Tacos

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped cilantro, for garnish
  • 1 lime, cut into wedges

Instructions

  1. In a skillet, heat olive oil over medium-high heat and sear the beef chuck roast on all sides until browned.
  2. Transfer the beef to the crock pot and add onion and garlic on top.
  3. In a bowl, mix beef broth, apple cider vinegar, cumin, oregano, paprika, chili powder, and bay leaves, then pour over the beef.
  4. Cover and cook on low for 8 hours or until the beef is tender.
  5. Remove the beef from the crock pot and shred it with two forks. Discard bay leaves.
  6. Heat tortillas in a skillet, fill with shredded beef, and garnish with cilantro and lime juice.

Notes

  • For extra flavor, marinate the beef overnight with spices.
  • Serve with a side of consomé for dipping.
