- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon apple cider vinegar
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 2 bay leaves
- 12 corn tortillas
- 1 cup chopped cilantro, for garnish
- 1 lime, cut into wedges
- In a skillet, heat olive oil over medium-high heat and sear the beef chuck roast on all sides until browned.
- Transfer the beef to the crock pot and add onion and garlic on top.
- In a bowl, mix beef broth, apple cider vinegar, cumin, oregano, paprika, chili powder, and bay leaves, then pour over the beef.
- Cover and cook on low for 8 hours or until the beef is tender.
- Remove the beef from the crock pot and shred it with two forks. Discard bay leaves.
- Heat tortillas in a skillet, fill with shredded beef, and garnish with cilantro and lime juice.
Notes
- For extra flavor, marinate the beef overnight with spices.
- Serve with a side of consomé for dipping.
