Crock Pot Birria Tacos

  • 3 pounds beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 cups beef broth
  • 12 corn tortillas
  • 1 lime, cut into wedges
  • 1 bunch fresh cilantro, chopped
  • 1 cup diced onion
  • 1 cup diced tomatoes

Instructions

  1. In a skillet over medium heat, toast the guajillo and ancho chiles until fragrant, about 2 minutes. Remove and set aside.
  2. In the same skillet, add the beef chuck roast and sear on all sides until browned.
  3. Transfer the seared beef to the crock pot.
  4. Add the toasted chiles, onion, garlic, cumin, oregano, and beef broth to the crock pot.
  5. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
  6. Once cooked, shred the meat and mix it with the sauce.
  7. Warm the tortillas on a skillet and fill them with the beef mixture.
  8. Serve with lime wedges, cilantro, and diced onions on top.

Notes

  • For extra flavor, marinate the beef overnight.
  • You can use beef shank or short ribs for a richer taste.
