- 3 pounds beef chuck roast
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 cups beef broth
- 12 corn tortillas
- 1 lime, cut into wedges
- 1 bunch fresh cilantro, chopped
- 1 cup diced onion
- 1 cup diced tomatoes
- In a skillet over medium heat, toast the guajillo and ancho chiles until fragrant, about 2 minutes. Remove and set aside.
- In the same skillet, add the beef chuck roast and sear on all sides until browned.
- Transfer the seared beef to the crock pot.
- Add the toasted chiles, onion, garlic, cumin, oregano, and beef broth to the crock pot.
- Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
- Once cooked, shred the meat and mix it with the sauce.
- Warm the tortillas on a skillet and fill them with the beef mixture.
- Serve with lime wedges, cilantro, and diced onions on top.
