Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a bowl, combine the grated zucchini, flour, egg, salt, pepper, Parmesan cheese, and herbs until well mixed.
  3. Heat the olive oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flatten slightly with a spatula, and cook until golden brown on both sides.
  5. Remove from the pan and place on paper towels to absorb excess oil.
