  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic; sauté until translucent.
  3. Stir in mixed vegetables and potatoes; cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  6. Add heavy cream, salt, pepper, and thyme; stir well.
  7. Simmer for an additional 5 minutes.
