Creamy Reuben Soup

A comforting and hearty soup that combines the flavors of a Reuben sandwich with a creamy twist, featuring turkey bacon and chicken ham.

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup sauerkraut, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon cornstarch
  • 2 cups shredded Swiss cheese
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside; leave the drippings in the pot.
  2. Add the chopped onion and cook until translucent. Stir in the garlic and cook until fragrant.
  3. Add the diced chicken ham and sauerkraut, mixing well.
  4. Pour in the chicken broth and bring to a simmer.
  5. In a bowl, whisk together the heavy cream and cornstarch until smooth. Slowly stir this mixture into the pot.
  6. Stir in the shredded Swiss cheese and caraway seeds, allowing the cheese to melt.
  7. Season with salt and pepper according to taste.
  8. Serve hot, garnished with the crispy turkey bacon.

Notes

  • You can substitute turkey bacon with regular bacon if desired.
  • Adjust the thickness of the soup by adding more or less chicken broth.
