Bake in the oven for about 45 minutes or until tender.
While the potatoes are baking, prepare the apple filling by combining diced apples, cinnamon, nutmeg, ginger, brown sugar, raisins, and walnuts in a bowl.
Once the sweet potatoes are done, let them cool slightly, then split them open and fluff the insides with a fork.
Mix in the butter and combine with the apple mixture.
Stuff the sweet potatoes with the apple mixture.
Return to the oven for an additional 10 minutes to warm through.
