Cottage Cheese and Veggie Bake

A delicious and nutritious bake featuring cottage cheese and a variety of fresh vegetables.

  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped onions
  • 1 cup shredded cheese
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cottage cheese, spinach, bell peppers, onions, shredded cheese, eggs, salt, and pepper.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 30-35 minutes or until the top is golden brown.
  5. Let it cool for 5 minutes before serving.
