  • 1 cup rice
  • 1/2 cup dried cranberries
  • 1 apple, chopped
  • 1/4 cup onion, diced
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, melt the butter and sauté the onion until translucent.
  3. Add the rice, cranberries, and apple, stirring for a few minutes.
  4. Pour in the chicken broth and season with salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer until rice is cooked.
  5. Stuff the Cornish hens with the rice mixture and place them in a roasting pan.
  6. Roast the hens in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let them rest for 10 minutes before serving.
