  • 2 cups cooked wild rice
  • 1 pound cooked chicken, shredded
  • 1 cup celery, chopped
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pan, heat olive oil over medium heat. Sauté onions, celery, and carrots until tender.
  3. In a large bowl, combine the cooked wild rice, chicken, sautéed vegetables, chicken broth, cream of mushroom soup, garlic powder, thyme, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Bake in the preheated oven for 30-35 minutes or until heated through and bubbly.
