  • 2 Cornish hens
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the Cornish hens dry with paper towels and place them in a roasting pan.
  3. Drizzle olive oil over the hens and rub to coat evenly.
  4. In a small bowl, mix Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  5. Rub the spice mixture all over the hens, including inside the cavity.
  6. Stuff each hen with a half lemon.
  7. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  8. Rest for 10 minutes before serving.

Notes

  • For extra crispy skin, ensure the hens are completely dry before seasoning.
  • Letting the hens rest before carving allows the juices to redistribute.
