Butternut Ravioli Soup

Butternut Ravioli Soup is a creamy and comforting dish that combines the rich flavors of butternut squash with the delightful addition of ravioli, creating a perfect meal for chilly days.

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups butternut squash, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 package fresh or frozen ravioli
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until translucent.
  2. Pour in the vegetable broth and add the butternut squash and thyme. Bring to a boil, then reduce heat and simmer until the squash is tender.
  3. Using an immersion blender, purée the soup until smooth.
  4. Stir in the ravioli and cook according to package instructions.
  5. Add the heavy cream and season with salt and pepper. Heat through.
  6. Serve warm, garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
