- 2 pounds baby potatoes
- 6 slices turkey bacon
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup chopped green onions
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes, then spread them on a baking sheet.
- Drizzle with olive oil, salt, and pepper, then roast for 25-30 minutes or until golden brown and tender.
- While the potatoes are roasting, cook the turkey bacon in a skillet until crispy.
