A delicious twist on the classic potato salad featuring roasted potatoes and savory turkey bacon.

  • 2 pounds baby potatoes
  • 6 slices turkey bacon
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped green onions
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then spread them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper, then roast for 25-30 minutes or until golden brown and tender.
  4. While the potatoes are roasting, cook the turkey bacon in a skillet until crispy.
  5. In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  6. Once the potatoes are done, let them cool slightly before adding them to the bowl with the dressing.
  7. Chop the bacon and add it, along with the green onions and parsley, to the potatoes. Toss gently to combine.
  8. Serve warm or chilled.
