  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat. Sear the pork on all sides until golden brown.
  4. Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  5. In the same skillet, add heavy cream and Dijon mustard, scraping up browned bits. Stir in fresh thyme to create the sauce.
  6. Slice the pork and serve drizzled with the Dijon cream sauce.
