  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado ripe, for the sauce
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 garlic clove, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine chopped salmon, breadcrumbs, parsley, egg, minced garlic, lemon juice, salt, and black pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 15-20 minutes or until cooked through.
  5. In a blender, combine avocado, Greek yogurt, lime juice, and minced garlic, then blend until smooth.
  6. Serve the meatballs with the creamy avocado sauce.

Notes

  • For a spicier sauce, add a jalapeño to the blender.
