- 8 ounces gnocchi
- 6 slices bacon, diced
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onions and garlic, cooking until translucent.
- Pour in the chicken broth, bring to a boil, and add gnocchi. Cook until gnocchi is tender.
