Bacon Cheddar Gnocchi Soup

  • 8 ounces gnocchi
  • 6 slices bacon, diced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, cooking until translucent.
  3. Pour in the chicken broth, bring to a boil, and add gnocchi. Cook until gnocchi is tender.
  4. Stir in heavy cream, cheddar cheese, thyme, salt, and pepper. Cook until cheese is melted and the soup is heated through.
  5. Top with crispy bacon before serving.
