  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup apple cider
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add vanilla extract and mix well.
  5. Incorporate the eggs, one at a time, mixing well after each addition.
  6. Stir in the apple cider and spices until fully combined.
  7. Pour the cheesecake mixture over the crust and smooth the top.
  8. Bake for 60 minutes or until the center is set.
  9. Let cool before refrigerating for at least 4 hours.
